Usually, you need to have 糠 rice bran to pickle vegetables, but with yogurt and miso, you can come very close to the same satisfaction. You can pickle carrot, daikon, cucumber, celery, pumpkin, turnip, you can try with whatever you have available.

Yogurt Miso Pickles

1. Mix Yogurt 100g, Miso 100g, and a tablespoon of honey.

2. Peel the vegetables. Cut the vegetables roughly, massage them with salt, let them sit for half an hour. Take out salt and pad them dry with kitchen paper.

3. Mix vegetables with Yogurt Miso mixture and keep it in a container in the fridge for 2 days.

4. Rinse the vegetables with water to take out the Yogurt Miso mixture.
